IT ALL STARTED WITH A MISSED MORNING
Years ago, our head baker Liam Carter arrived before sunrise only to find a batch of croissants slightly overbaked. Instead of wasting the dough, he got creative. Inspired by his grandmother’s handwritten recipe collection, Liam transformed those imperfect croissants into something extraordinary — filled with homemade almond cream, brushed with syrup, and topped with toasted almonds. The result? A happy accident that became a customer favorite.

Each almond croissant is made over two days: first, we prepare the buttery laminated dough with care, then after baking, it’s filled with rich frangipane almond cream and baked again to achieve a perfectly toasted, gooey finish. We only use European-style butter and finely ground almonds for our signature recipe.
