IT ALL STARTED WITH A MISSED MORNING
Several years ago, our head baker Liam Carter arrived at the bakery before sunrise — only to discover that a small batch of croissants had slightly overbaked. Not one to waste good dough, he got creative.
Inspired by a recipe from his grandmother’s handwritten collection, Liam transformed the “too-perfect” pastries into something extraordinary: He filled them with almond cream, brushed them with syrup, and topped with toasted almonds. The result? A happy accident turned customer favorite.

Each almond croissant is handcrafted over two days:
First, we prepare our signature dough — layering it with care.
Then, after baking, it’s filled thick with frangipane almond cream and baked again for that perfectly toasted, gooey finish.
We don’t cut corners. From European-style butter to finely ground almonds, only quality ingredients make it into our signature recipe.
